Ancient Method, Modern Cuisine: The Rooster takes Santa Monica by Fire!

The Rooster is Chef/Restauranteur Bruce Marder’s latest addition to the Santa Monica scene. Everything from the kitchen is kissed by almond-wood flames from the tender, grilled meats served up family style, to pizzas and flatbreads baked in the wood fire oven. The location also houses our Red Rooster bakery, once whole-sale, now open to the public, featuring finely crafted artisan breads, bagels, and pastries.

Bruce Marder, head of the Foodco West Group, first garnered the public’s attention with restaurants West Beach Cafe and then Rebecca’s. He now lists Capo, The Brentwood, Cora’s Coffee Shop, and Marvin as his current successes. Renowned for his world class cuisine, his skills encompass a deep appreciation for international flavors that he unabashedly blends into an American style menu that celebrates our cultural diversity. Offerings range from succulent fish tacos, creamy eggplant-tahina babaganoush, classic Neapolitan pizza’s featuring house made sourdough crusts, to slow cooked beef topped with truffles. Marder bucks every label except delicious.

The finest of ingredients, sourced from the farmers’ market, our personal garden, and highly regarded local ranchers, are the foundation of a cuisine that exemplifies the purity of the flavors without unnecessary adulteration. Rooster makes everything it can from scratch, featuring house made breads, delectable sauces for pairing with grilled meats, and even cures its own charcuterie. Equally passionate about beverage pairings, the bar offers a wide selection of boutique liquors and the wine cellar boasts an impressive variety of all price points for any connoisseur as well as superstars like Screaming Eagle, Sassicaia, and Cheval Blanc for the most discerning guest. 

The dining room is a clean, modern design with a fully open kitchen, leaving little delineation between guest and chef while offering full transparency of the attention to detail involved in each dish. Exposed brick walls and wooden rafters are paired with Marder’s signature eclectic art collection including his mischievous gnomes. The cozy space offers cowhide banquets, a chef’s communal table that offers up-close views of the kitchen action and a reclaimed wood bar that stretches the length of the dining room. A place that can cater to the intimate, romantic dinner just as well as large family gatherings or business meetings.
